MCMoney is an economy addon with player shops, banks, ATMs, merchants, and more. It was made to work in both survival and multiplayer with ways to earn and spend money in both.

Make the normal Villagers use the Money for Trades. If you don't like it or if it's just not possible then I have another suggestion
Create different types of Merchants, maybe some sells only fishes and anything related to the sea, or a Crop merchant or a Block merchant where you could buy dirt or sand.
