Bosses are actually excluded from the list to not make it almost impossible, but I could add that into a harder difficulty setting if you want it.

Can you please tell me what version of Minecraft you're on? Also there was an update so try the updated version, it's likely that the previous versions didn't work in Minecraft Preview/Betas because of many breaking changes.
