How do I stop it from defaulting on the default mc textures?
It happened with all 10 of my skins I used

May be you are making some mistakes in textures name

should make it so they could have sit animation and able to hold items because y'know,i replaceitem them

The suggestion is complex don't know if it's possible to do it only with resource pack, may be other people uses addon to give items in NPC hand

you should make it so that the npcs are the other default Minecraft skins too.

They have multiple skins just look into the file [you can give them 50+ skins]
Soon I will upload it for slim skin too
